Quesadillas

Serves 4-6

1 pack of tortillas

1/2 can of black beans, rinsed and drained

250g shredded mozzarella cheese

1-2 tbsps of smokey aioli

1-2 tbsps of sour cream

1 lime, juiced

olive oil

Directions

On med heat, lightly coat frying pan with olive oil. Place one tortilla in pan and scatter a handful of shredded cheese and of black beans evenly on top. Once the cheese begins to melt, fold the tortilla in half using a spatula. Once cheese is completely melted, remove from pan and slice into triangles. Repeat process to make more quesadillas.  Mix aioli and sour cream and lime juice in bowl. Add salt a pepper to taste. Serve with quesadillas. 

Nachos

Serves 4-6

Ingredients

1 pack of tortilla chips

250g shredded mozzarella cheese

500g beef mince

140g cheddar cheese, grated

2-3 tbsps Mexican spice

1 garlic clove, minced

3 tomatoes, diced

1/2 red capsicum, diced

1 brown onion, finely diced

1-2 green chillis, diced

1 can black beans, drained and rinsed

1/2 bunch of coriander, finely chopped to serve

2 avocados, roughly chopped to serve

2-3 tbsps of sour cream, to serve

Directions

Preheat oven to 180 C. Spread tortilla chips out into an even layer on baking tray, set aside. Brown beef by heating olive oil in a 12-inch non-stick skillet over medium-high heat. Add beef and mexican spice in chunks and cook, and crumble tossing beef occasionally until cooked through about 6 minutes. Drain fat. Layer beef mixture and cheeses on nachos by spooning mixture evenly over chips. Sprinkle both cheeses over the ground beef layer. Bake in preheated oven until cheese is melted ,about 5 to 8 minutes. In a medium bowl, add chopped tomatoes, onion, garlic, black beans, green chilli, capsicum and coriander. Stir together. Spread mixture on top of nachos. Add chopped avocados and sour cream. Serve immediately.
