Get the whole family involved and make this beautiful Mexican feast inspired by Disney's hit movie (that our kids can't stop talking about) Encanto! Just remember, we don't talk about Bruno ;-)

Here's what you'll need:

Makes 16 tacos

Tacos & Toppings:

2 x chilli, sliced (optional)

2 x packs of corn tortillas

3 x corn, grilled 

1 red onion, diced

1 x coriander bunch

Marinade:

2 x 500g chicken thighs

2 tablespoons Mexican spice

4 tablespoons of olive oil

2 teaspoons of white wine vinegar

2 x limes, juiced

Guacamole:

4 x ripe avocados

1 x blue totopos tortilla chips

1 x clove of garlic, minced

1 x lime

 Directions

  1. In a large bowl, add all ingredients for the marinade. Mix together to fully combine.
  2. Add the chicken thighs to the marinade and then cover and put in the fridge for up to 30 minutes.
  3. Meanwhile, make guacamole by mashing avocados and adding chopped coriander, chilli (optional), garlic and lime juice in a bowl. Add salt and pepper to taste and then set aside to add as a taco topping or, if you can't wait, get your tortilla chips out and start dippin!
  4. Heat a large non-stick skillet over medium-high heat. Add the marinated chicken thighs to the skillet with tongs and cook 5-7 minutes per side, until fully cooked through. Discard the used marinade.
  5. Transfer chicken to cutting board and let rest for 5 minutes. While the chicken is resting, warm up the corn tortillas in the microwave.
  6. Cut the chicken into bite-sized chunks and serve in warm tortillas with your favourite toppings. Enjoy!
