Jaeger's Chicken Noodle Soup Jaeger's Chicken Noodle Soup

Serves 6

Ingredients

Broth:

4-5 cups of water

3-4 star anise

3 cinnamon sticks

1 whole garlic bulb

100g  ginger 

2-3 shallots

1 bunch coriander

1 daikon

salt & pepper

Soup:

1 whole chicken

1 fresh egg noodles 375g

2 baby bok choy bunches

Method

 Bring a large pot of water to boiling. In a large dutch oven or pot, lightly brown the chicken with oil. Once the chicken is browned, add garlic, ginger, onion, cumin, salt and pepper. Cook for 1 minute, until the spices release fragrance. Add broth stock. Bring to boil over medium heat then reduce to a simmer. Cook for 30-40 minutes. Remove chicken with tongs and transfer to a plate. Use two forks remove the chicken skin and shred the chicken meat. Use a mesh strainer to remove the solid ingredients from the broth and discard. Return shredded chicken to pot. Add salt to taste. Heat over medium heat again to return to boil. Add bok choy for another minute. Add noodles for another minute or two. Transfer soup and noodles to bowls. Garnish with chilli, cilantro and a dash of soy sauce if desired.
